I can get the feeling of worthiness from a simple thing like taking the time to SIT down to have a healthy homemade meal that I prepared for myself. This is not a meal for the kids, or the guest, or the anybody and everybody that I enlist myself to take care of…. this is just for me. Like MANY of you out there, I am a nurturer. We take care of spouses and parents and kids and the community but so often neglect ourselves. We CAN continue to serve others with more energy and joy IF we allow ourselves to be the recipients of our own gifts. This #organic lunch is a simple corn tortilla filled with grilled chicken, roasted pepper and tomatillo salsa and a to die for raw cabbage salad (Ingredients listed below). The tea is an Acai Green and is served in a cup my daughter gave me. The inside says “I❤️U” and every time I take a sip, I smile.
Basically, I don’t have a formula for putting this together. I just add all of these items in a bowl and mix. I love lemon and lime, so I usually add at least half of a large lime to a single serving. You should just add all the ingredients to taste.
Finally, sit down, relax and enjoy your meal. You are worth it!
